Serves: 2

4 eggs, poached

2 English muffins, split & toasted

1 cup crab meat 

1 avocado, ripe cut into ¼ inch slices

Hollandaise sauce, see below

Chives, finely sliced for serving

  • Top each muffin half with avocado, crab and then poached egg

  • Drizzle with hollandaise sauce and sprinkle with chives

  • Serve

Blender Hollandaise

10 tablespoons salted butter

3 egg yolks

Juice of ½ lemon

1/8 teaspoon cayenne 

  • Put egg yolks, lemon juice and cayenne into a blender, and blend on medium until slightly thickened and pale yellow – about 30 seconds

  • Melt Finlandia butter on low in a small pot - don't let it burn

  • Turn on blender on and slowly drizzle in melted butter

  • Blend until everything is mixed and the hollandaise has thickened

FINLANDIA GINGER SCALLOPS

Butter, scallops & ginger - this is truly a magical combination.

Prep Time: 5 minutes
Cook Time: 4 minutes
Total Time: 9 minutes

INGREDIENTS

  • 3 tablespoons Finlandia butter*
  • 2 tablespoons fresh ginger, finely chopped
  • 2 tablespoons green onion, finely chopped
  • 1 pound large fresh scallops, about 12
  • Canola oil
  • Kosher salt & fresh ground pepper to taste

DIRECTIONS

  1. Combine butter, ginger and green onion in a small bowl – mix well and set aside
  2. Lightly oil room temperature scallops and season with salt, pepper and put in a hot non-stick pan
  3. When scallops are golden brown on bottom – after about a minute and a half, flip over and add the butter
  4. While they cook on the second side, baste the scallops with the melting butter – and when done…
  5. Plate on top of rice and drizzle with more of the butte.

Wings with Curry Sauce

When it comes to curry, I’m like the little old lady in the Frank’s commercial – I put that shit on everything.

INGREDIENTS

  • 18 chicken wings

  • 3 tablespoons butter

  • 1 tablespoon flour 

  • 2 tablespoons curry powder

  • 1/3 cup coconut milk

  • 1/3 cup milk

  • 1 tablespoon Sambal Chili Paste or Sriracha

  • Kosher salt

  • cilantro or diced green onion for garnish 

DIRECTIONS

  1. Preheat broiler

  2. Place wings on a foil lined baking sheet and broil until done, 10 - 15 minutes a side

  3. While they're cooking, melt butter in a small pot over medium/low heat

  4. When it’s melted, add flour and curry powder – stir well, mix together about a minute 

  5. Pour in both milks – stirring well with a whisk until it begins to thicken

  6. Add chili sauce, season with salt and stir well – keep warm

  7. Remove wings from oven, put in a large bowl and toss with as much curry sauce as you like

  8. Plate and garnish with cilantro or green onions

  9. Serve

Scallop Pan Roast

These remind me one of my favorite restaurants - the Oyster Bar at the Palace Station Hotel in Las Vegas. Btw, I said favorite restaurant, not hotel.  This is the place where OJ was arrested.

Serves 2 generously

INGREDIENTS

  • 6 Sea Scallops defrosted or fresh
  • 1/4 cup whipping cream
  • 1/2 cup butter
  • 1/2 cup dry vermouth
  • 1/4 teaspoon paprika
  • 1/4 teaspoon celery salt
  • 1/4 cup clam juice
  • 1/2 teaspoon Worcestershire sauce
  • 2 tablespoons ketchup
  • 1 tablespoon horseradish
  • 1/2 lemon, juice only
  • 1/2 tablespoon Tabasco (I used Cholula) 
  • small pinch Kosher salt
  • parsley for garnish

DIRECTIONS

  1. In a deep skillet on low/medium heat melt the butter
  2. Then, EXCEPT for the scallops, whipped cream and parsley.. add all the remaining ingredients, simmer for 3-4 minutes
  3. Pat the scallops dry
  4. Add the cream and scallops to the skillet, simmer for 3 minutes
  5. Serve on a bed of steamed white rice, garnish with parsley enjoy!

Plain pasta for kids is made even better with Finlandia butter.  And for the bigger kids, try this version with Finlandia Classic Creamy Gourmet Cheese & vermouth. 


NOODLES WITH FINLANDIA CLASSIC CREAMY GOURMET CHEESE

Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes

INGREDIENTS

  • 8 oz pasta: spaghetti, fettuccini, linguini – whatever your fav is

  • 1/4 cup butter

  • 4 oz Finlandia Classic Creamy Gourmet Cheese*

  • 1 oz dry vermouth

  • 1/3 cup shredded Parmesan

  • Kosher salt and fresh ground pepper

  • Parsley for garnish

DIRECTIONS

  1. Cook noodles in boiling, salted water, stirring occasionally until done, about 8 minutes

  2. While they cook, melt Finlandia butter* with Finlandia Classic Creamy Gourmet Cheese* in a small pot until mixed, then add parmesan and vermouth- stir until smooth

  3. Season with salt & pepper

  4. Drain noodles and toss with the sauce, and a sprinkle of parsley. Serve.

Don't own a waffle iron? Borrow one - you'll be glad you did.

INGREDIENTS

  • 1 8.5 oz bix of Jiffy Corn Muffin mix
  • 1 egg, beaten
  • 3/4 cup milk
  • 2 tablespoons vegetable oil
  • 1/2 cup diced, cooked crispy bacon
  • 1/3 cup cheddar cheese
  • 1/4 cup diced green chilies

DIRECTIONS

  1. Preheat waffle iron
  2. Combine all ingredients in a large bowl - mix well
  3. Spray both sides of waffle iron with non-stick spray, add batter and close
  4. Cook until done, add butter to the top if you want (and why wouldn’t you) then eat.

Crazy Effing Good Chicken Sandwich

This is the ultimate football/sport watching food.

Serves 4

INGREDIENTS

  • 1 tube fridge biscuits
  • 1/3 cup Finlandia butter*
  • 1/3 cup Franks hot sauce  
  • 2 tablespoons honey
  • 4 pre-cooked Fried Chicken tenders, room temp
  • 2 tablespoons Kewpie (Japanese) Mayonaise
  • 1 cup Iceberg lettuce, shredded

 DIRECTIONS

  1. Cook biscuits, as per instructions, put to the side and keep warm
  2. Melt butter and hot sauce, on low heat for 1 minute
  3. Add honey to sauce, add the fried chicken, coat well and cook on medium for 2 minutes
  4. Layer your sandwich: half biscuit, tablespoon of mayo, tablespoon cooked sauce, lettuce, chicken tender, top with biscuit, eat!

Butter Potatoes

The simple potato is pretty darn good by itself. But, when some delicious Finlandia butter* is added… look out. 

Serves: 3-4 people
Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes 

INGREDIENTS

  • 1 pound small new potatoes
  • Kosher salt & fresh ground black pepper
  • ¼ cup Finlandia butter*, softened
  • Kosher salt & fresh ground black pepper
  • 1-2 teaspoons fresh thyme

DIRECTIONS

  1. Put potatoes in a pot, cover with cold water and add 1 tablespoon of salt
  2. Bring to a boil, lower the heat slightly and cook until potatoes can easily be pierced with a fork – about 15 minutes then drain well – set aside
  3. Melt butter in a heavy pan, add potatoes and toss carefully making sure potatoes are covered with butter
  4. Season with salt, pepper and add thyme – mix through and serve.

Steamed Artichokes

Weird looking? Yes. Simple to cook? Yes.  Delicious? Oh hell yes!

Prep Time: 5 minutes
Cook Time: 45 minutes
Total Time: 50 minutes

INGREDIENTS

  • 2 or 3 artichokes, approximately 1 for every 2 people

  • ½ stick butter

  • 1 clove garlic, minced

  • Juice of ½ lemon

  • 1 sprig fresh thyme

DIRECTIONS

  1. Cut the stem off the bottom of each artichoke so it will sit flat, and about 1 inch off the top of each

  2. Then cut the point off each leaf (to keep you & your guests from getting poked)

  3. Place artichokes in large steamer with about 3 inches of water below, cover with a lid and steam about 45 minutes, or until you can pull off a leaf off easily

  4. While it cooks, melt the butter in a small pot with a minced clove of garlic, lemon juice and a thyme

  5. Put artichokes on a serving plate with a bowl of the dipping butter beside.

Salmon Soup

Salmon Soup

A Finnish classic – that you MUST make. 

Serves 4-6

INGREDIENTS 

  • 2 small leeks, cleans and sliced thin– but just the white & light green parts 
  • 2 tablespoons Finlandia butter*
  • 5 cups fish stock, chicken or vegetable stock will work but try to find fish stock if you can
  • 1 pound fingerling potatoes, sliced crosswise into ¼ inch slices
  • 3 small carrots, sliced crosswise into1/4 inch slices
  • 1 pound fresh salmon, no skin and bones removed cut into bite size pieces
  • 1 cup whipping cream
  • ¾ cup finely chopped fresh dill
  • Kosher salt & fresh ground pepper to taste

DIRECTIONS

  1. Cook the leeks in butter over medium heat in a pot until just softened – about 5 minutes
  2. Add the stock, potatoes, carrots and bring to a boil 
  3. Let cook 10-12 minutes or until vegetables have softened
  4. Then add the cream and salmon and cook about 5 minutes more or until salmon is firm – try not to let it boil
  5. Turn off the heat, add the dill, stir well and season to taste with salt and pepper
  6. Cover with a lid and let sit 5 or so more minutes and serve (with some delicious dark bread like they would in Finland).

Makes about 1/3 cup
Prep time: 2 minutes
Cook time: 5 minutes
Total time: 7 minutes

Really... do you need to hear anything more than just lemon & butter? 
I think not – though if you did, shallots & parsley are the rest of it. 

INGREDIENTS

  • ¼ cup lemon juice
  • Pinch Kosher salt
  • 1 tablespoon shallot, finely chopped
  • ¼ stick cold Finlandia butter*, cut into cubes
  • 1 tablespoon finely chopped parsley

DIRECTIONS

  1. Warm a small pan over medium-high heat and add lemon juice and shallot
  2. Cook until reduced by approximately ½, then add butter 
  3. Slowly swirl butter into the mixture until thickened, season with salt and add parsley
  4. Stir to mix and serve

I know what you're thinking, and if you thinking buttery, delicious and amazing… you're right. If that's not what you're thinking, maybe you should try this first.

INGREDIENTS

  • ¼ cup Finlandia butter*, room temperature
  • ¼ cup freshly chopped parsley, 4 tablespoons
  • ½ teaspoon freshly ground black pepper
  • 2 chicken breasts
  • Olive oil
  • Kosher salt

DIRECTIONS

  1. Preheat grill to high
  2. Put butter, parsley & black pepper in a small bowl and mix well to combine – set aside
  3. Place chicken breasts one at a time into a zip lock bag, add a little olive oil to each side and close bag
  4. Using something heavy like a bottle of olive oil or vodka (my favorite btw) pound them carefully to an even thickness - approx 1/2'' thick
  5. Remove from bag, season each breast well with Kosher salt and put on hot grill
  6. Place chicken on the heated grill, cook approximately 3 minutes then turn 45 degrees to create cross hatch marks – cook another 2 minutes
  7. Flip chicken over and spread another tablespoon of butter mixture on each breast
  8. Cook until bottom is just cooked, then flip and give the top side a coating of butter
  9. Take chicken off grill, brush with softened butter one last time and serve – in a sandwich, sliced on some pasta or use on a salad.

Grilled veggies - good.  Grilled veggies with herb butter – tremendous.

INGREDIENTS

  • 2 red peppers, cored and cut into 2 inch slices
  • 2 yellow peppers, cored and cut into 2 inch slices
  • 1 red onion cut into 1/2 inch thick slices
  • 1 pound asparagus, thick ends removed
  • ½ cup Finlandia butter*, diced
  • 2 tablespoons Dijon mustard
  • 1 teaspoon each fresh thyme, rosemary and parsley, finely chopped
  • 1 clove garlic, finely minced
  • Salt & fresh ground pepper

DIRECTIONS

  1. Preheat grill to medium high
  2. Combine butter, mustard, herbs, garlic & salt and pepper in a small pot, and stir over medium until melted and well blended – keep warm
  3. Grill vegetables, brushing with herb butter until done – being sure to baste once more before serving.

Crazy Good Garlic Bread

Makes one loaf – and a damn good one at that

1/2 cup butter, room temperature

6 cloves garlic, finely crushed

1/2 cup shredded Parmesan

1 bunch green onions, white & light green parts only, finely chopped

1 /3 cup chopped curly parsley

1/2 teaspoon Kosher salt

1 loaf French or sourdough bread

  • Preheat oven to 425

  • Put garlic & butter in a large bowl, mix well then add the Parmesan, green onions, parsley and salt - combine everything

  • Cut loaf in half lengthwise and spread mixture on each cut side

  • Place on baking sheet and put in oven about 6 minutes

  • Turn oven to broil, then put loaves back in about 6-8 inches away from the heat until bread is beautifully golden brown and bubbly

  • Slice into 2 inch pieces and serve

Grilled Chili-Lime Corn

Makes: 6 ears
Prep Time: 5 minutes
Cook Time: 30 minutes
Total Time: 40 minutes

You may never want plain corn again.

6 ears of corn, husks removed and silk pulled off

8 ounces butter

2 cloves garlic, peeled and smashed

2 tablespoons chili powder

Juice from 4 limes

Neutral oil

Kosher salt

  • Heat grill to medium

  • Slowly melt butter in a small pot and add the garlic, chili powder & juice from 3 of the limes - mix well - let sit on very low for the flavors to get better - btw this could easily be done well beforehand, just remelt it when ready to go

  • Brush the ears lightly with a little of the oil (and btw why the hell are they called ears??) then grill until soft, nicely browned in spots and beautiful - this can take up to 30 minutes.

  • Start basting about 5 minutes in, then baste often until finished cooking

  • When done remove to a platter, brush one last time, squeeze on some of the remaining lime and sprinkle lightly with the salt

  • Serve

Tomato & Potato Chip Sandwich

Makes 4

I've been eating this about once a month since I was 18. It's the perfect late night food. And the mayo is important – so either the Japanese Kewpie mayo, Heinz Salad Cream or even Miracle Whip is preferable to regular mayo here.

Ingredients

  • 2 medium ripe tomatoes, sliced thin
  • 8 slices white bread - trust me
  • 4 tablespoons mayonnaise (see description above)
  • 4 BIG handfuls plain potato chips
  • Fresh ground pepper

Directions

  1. Spread mayo on 4 of the bread slices
  2. Top each with the tomatoes
  3. Season well with pepper - don't be shy
  4. Place a handful of chips in a pile to each and gently balance 2nd slice on top
  5. Now squish the whole thing flat with your hand, cut in half and eat

Salt and Pepper Shrimp

Makes 6 appetizer servings

Put this in front of your friends - they won't believe it! You can say "Yeah, I made it - I mean I made that!" No one has to know it took about 5 minutes in the kitchen but you.

Ingredients

  • 1/2 tablespoon Kosher salt
  • 1/2 tablespoon fresh ground pepper
  • 1 tablespoon peanut oil
  • 1 pound shrimp, raw shell-on & de-veined – 31/40’s are the prefect size
  • 2 large cloves garlic, chopped fine
  • 1/2 inch fresh ginger,minced
  • 1 bunch green onions, cut into 2 inch lengths

Directions

  1. Mix salt & pepper in small bowl and set aside
  2. Turn on the fan above your stove and heat a wok or pan until really really hot and smoking and then add the oil
  3. Wait until it smokes even more
  4. Don't get freaked out by the smoke
  5. Add garlic, ginger, green onion and the shrimp
  6. Stir often so all is mixed and shrimp are fully cooked – which should not take more than a couple minutes, then add the salt & pepper
  7. Stir fry quickly to coat shrimp in the salt and pepper mixture – serve
  8. Prepare yourself for the compliments to come

Cheryl’s Brown Butter Rice Krispie Treats

Makes 16 2" squares or 32 1"x2" small bars

I don't go for many sweet things, but this is a favorite of mine, it's in the top 10.

INGREDIENTS

  • 4 ounces (1/4 pound or 1 stick) unsalted butter, plus extra for the pan
  • 10-ounce bag Marshmallows
  • Heaping 1/4 teaspoon coarse sea salt
  • 6 cups Rice Krispies cereal (about half a 12-ounce box)

DIRECTIONS

  1. Grease an 8-inch square cake pan with 2-inch sides.
  2. In a large pot, melt butter over medium-low heat. It will melt, then foam, then turn clear golden and finally start to turn brown and smell nutty.
  3. Stir frequently, scraping up any bits from the bottom as you do. Don’t take your eyes off the pot as while you may be impatient for it to start browning, the period between the time the butter begins to take on color and the point where it burns is often less than a minute.
  4. As soon as the butter takes on a nutty color, turn the heat off and stir in the marshmallows. The residual heat from the melted butter should be enough to melt them, but if it is not, turn it back on low until the marshmallows are smooth.
  5. Remove the pot from the stove and stir in the salt and cereal together. Quickly spread into prepared pan. You can use a piece of waxed or parchment paper sprayed with oil or spread with butter (even better, save the wrapper from the butter and use that!) to press it firmly and evenly into the edges and corners, though a silicon spatula works almost as well.
  6. Let cool completely and then cut into squares. Devour.

Cast Iron Filet

Makes one steak or two or three.

This is about the process and works on pretty much any thick steak.  Thin steaks, less than an inch can be cooked perfectly in a pan over direct heat. But when they get thicker…they need a process like this

INGREDIENTS

  • One steak, at least an inch and a half thick (I’d rather have one good steak once a month, than one shitty steak once a week)
  • Canola oil
  • Kosher salt & fresh ground pepper

DIRECTIONS

  1. Remove steak from fridge 30-45 minutes before cooking
  2. 20 minutes before cooking, preheat oven to 450 degrees
  3. 10 minutes before cooking put a cast iron pan over high heat on your stove
  4. Lightly oil steak on both sides with oil, then season well with Kosher salt (this is not the place for table or iodized salt btw) & pepper
  5. Turn on your fan and place serving side down in the cast iron pan on the heat – leave for 90 seconds to get a good sear & crust
  6. Flip over and leave another 90 seconds, then using a towel put the whole pan with the steak into the 450 degree oven
  7. Using a good instant read thermometer, remove the pan when the steak reads between 125 and 130 for medium rare, put the steak on a plate and loosely cover with foil
  8. Let rest 10 minutes and serve
