Caviar Pie

Makes 2 molds that serve 4 - 6 appetizer servings each

My mom used to make this and serve it in a pie dish for company. And since it's not 1969 anymore - my version is a little different...

Ingredients

  • 2 hard boiled eggs, peeled and rough chopped with a fork
  • 1 Tbsp mayonnaise
  • Freshly ground pepper, to taste
  • 1/4 cup green onion, thinly sliced then chopped "confetti" style
  • 3 Tbsp cream cheese, softened
  • 2 Tbsp sour cream
  • Caviar (the inexpensive kind you can find at the grocery store)
  • Very thinly sliced baguette or crackers for dipping (try to keep them simple so the flavor of the dish comes out)

Directions

  1. Mix the eggs with the mayo and season with freshly ground pepper to taste
  2. In a separate bowl mix the cream cheese and sour cream until very smooth
  3. Use a mold or a clean empty soup can and spray the inside with Pam (or you could put it onto a plate and layer it free form style)
  4. First layer is the egg mixture, then some green onions, top with the sour cream/cream cheese mixture
  5. Last add a layer of the caviar on top
  6. Unmold carefully onto a platter
  7. Top with a sprinkle of green onions and serve with the thinly sliced baguette or your choice of cracker.

It’s 1973, Sacheen Littlefeather accepts the Best Actor Award for Marlon Brando in The Godfather, All in the Family was huge on TV and Green Goddess Dressing was all the rage – and still should be.  

INGREDIENTS

  • 2 tablespoons fresh tarragon
  • 1/3 cup fresh parsley 
  • 2 tablespoons fresh chives, coarsley chopped
  • 2 green onions, white & light green parts coarsely chopped
  • Juice of one lemon
  • 2 teaspoons anchovy paste
  • 1 tsp fresh ground pepper
  • 3/4 cup sour cream

DIRECTIONS

  1.  Put all ingredients in a processor and blend until smooth

Pasta with Bratwurst & Sour Cream

Pasta with Bratwurst & Sour Cream

Try this quick and easy dinner idea, it's hearty and packed with flavor.

INGREDIENTS

  • 1/2 pound penne pasta
  • 2 bratwurst, uncooked
  • 1/2 teaspoon red pepper flakes
  • Kosher salt & fresh ground pepper
  • 6 ounces sour cream
  • 1/4 cup parmesan cheese, grated plus a little more for serving
  • 1/4 cup finely chopped parsley
  • 2 -3 ounces milk or pasta water 

DIRECTIONS

  1. Boil pasta according to package directions
  2. Slice brats lengthwise, remove sausage and cook in a non-stick medium sized pan
  3. While it cooks, season with red pepper, salt & pepper
  4. When sausage is longer pink, add sour cream & stir well to combine
  5. Drain pasta (reserving about ½ cup pasta water) and add to sausage with most of the parsley and parmesan
  6. Mix well, and depending on how thick or thin you like it, add a little pasta water or milk
  7. Mix again well and plate, adding a little more parsley

Grilled Shrimp with Horseradish

Serves 4

This was donated by one of our Livecast viewer's, and as my sister-in-law Cheryl would say… this is a "super-duper" party appetizer. Thanks Ben, we love this.

INGREDIENTS

  • 1/3 cup sour cream
  • 1/2 - 1 tablespoon wasabi paste
  • 1 tablespoon lemon juice
  • 1 garlic clove, crushed
  • 1 tablespoon prepared fresh horseradish (fresh or I got mine from a jar)
  • 2 tablespoons fresh cilantro leaves, finely chopped
  • Kosher salt & fresh ground pepper to taste
  • 12-14 raw large shrimp, 21/25's would be great
  • Oil

DIRECTIONS

  1. Preheat grill or griddle to high
  2. Throw all the ingredients (minus the shrimp) in a bowl and mix well to combine
  3. Skewer the shrimp, lightly drizzle with the oil and grill for about 2 minutes each side
  4. Dip in the sauce and enjoy

Serves 4

Of course you can always put fries on a hot dog (and should) but there’s something about crispy hash browns that changes things. And then to combine them with sour cream and melty queso makes the whole thing ridiculous – in a good way of course.

INGREDIENTS

  • 4 hot dogs
  • 1/3 cup sour cream
  • 1 ½ cups chili, heated
  • 1 cups cooked, hot, crispy, hash browns 
  • 4 hot dog buns
  • 1 jar Salsa Con Queso
  • 4 tablespoons butter

DIRECTIONS

  • Cook hot dogs your favorite way – mine would be to grill them to perfection 
  • Open each bun, butter and cook on a flat griddle until golden brown
  • Remove lid from cheese jar and microwave until melty smooth – about a minute
  • Build the dog in this order:
  1. Bun
  2. Sour cream
  3. Chili
  4. Hot dog
  5. Hash browns
  6. Drizzle queso over the top

Pork² Burger

Makes 4 burgers

While a ground pork burger with bacon mixed in is potentially overkill, this is a way delicious burger. And considering there's a fried egg on this... way delicious.

Ingredients

  • 1lb ground pork (I used 95% lean)
  • 1/3 cup cooked bacon, crumbled
  • 1 big clove garlic, crushed
  • Kosher salt and fresh black pepper
  • 1/3 cup bread crumbs, Panko if possible
  • 4 slices Monterey Jack cheese
  • 4 eggs
  • 3 tablespoons of olive oil
  • 1/3 cup sour cream
  • 3 tablespoons green salsa
  • 4 English muffins (or any hamburger bun)
  • Butter
  • 1/2 - 3/4 cup alfalfa sprouts

Directions

  1. Combine pork, bacon, garlic, salt, pepper and bread crumbs - mix well and make into 4 patties
  2. Pre-heat griddle or non-stick pan to medium
  3. Lightly oil patties and cook 3 minutes then flip, add cheese and 2-3 more minutes until done
  4. Butter the muffins and toast or grill along side eggs in another pan
  5. Mix sour cream and green salsa
  6. Build the burger: muffin on bottom, generous amount of sauce, burger, fried egg, sprouts and top muffin

Blue Cheese Wedge

Serves 6

Who says iceberg lettuce is only for burgers or rabbits? Try this awesome, crispy throw-back for dinner one night while watching Walter Cronkite & serving roumaki as an appetizer.

Ingredients

  • 1 head iceberg lettuce
  • 1/2 cup sour cream
  • 1/2 cup mayo
  • 2 ounces blue cheese crumbles
  • 2 teaspoons Worcestershire sauce
  • 2-3 tablespoons milk
  • 1 tomato, diced
  • 1 ripe avocado, diced
  • 1/2 cup cook & crumbled bacon

Directions

  1. Remove outer, ugly lettuce leaves and slice down the middle
  2. Slice each half into 3 wedges, and put on a plate
  3. Mix sour cream, mayo, blue cheese and Worcestershire
  4. Mix well and add as much milk as needed for desired thickness - I like mine a bit more creamy
  5. Spoon dressing over each wedge and scatter with the diced tomatoes, avocado and bacon
  6. Top with fresh ground pepper... of course

Pepper Halibut with Salsa Cream

Pepper Halibut with Salsa Cream

Serves 6

I know - it sounds fancy and I'm not fancy. So who cares, just make it and impress your friends. But heed my warning - if you use red salsa instead of green - this will become one of the most horrifyingly ugly dishes you've ever made - so don't.

Ingredients

  • 1 red pepper, finely diced
  • 1 yellow pepper, finely diced
  • 1 Anaheim chili pepper, finely diced
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 2 pounds Halibut
  • 3/4 cup sour cream
  • 1/3 cup salsa verde (green salsa)
  • 1 teaspoon each cumin, cayenne and chili powder
  • 2 tablespoons cilantro, chopped

Directions

  1. Heat a non-stick pan to medium high, add olive oil, peppers and garlic and cook until just softened and just beginning to brown, about 5 minutes and set aside
  2. While that's cooking, heat broiler
  3. Combine cumin, chili powder and cayenne - and sprinkle over halibut
  4. Broil halibut until done – about 5-7 minutes depending on thickness
  5. While halibut and peppers cook, combine sour cream and salsa in a little pot and simmer until heated through
  6. Plate it by putting some pepper mixture on plate, then halibut on top and spoon some of the salsa cream over the top
  7. Garnish with a little cilantro

Mashed Potato Tacos

Makes 4

You know those left-over mashed potatoes you don't know what to do with? Well here's the answer...

Ingredients

  • 4 corn tortillas

  • 2 tablespoons sour cream

  • 1 cup leftover mashed potatoes

  • Hot sauce - I like Cholula, about 4 teaspoons

  • 1/3 cup green onions, chopped fine

  • 4 handfuls of potato chips - preferably the extra crispy kettle kind

Directions

  1. Heat the tortillas in a non-stick skillet until just beginning to get a little color in spots

  2. Heat potatoes in a small pot of in the microwave

  3. Spread some sour cream onto each tortilla

  4. Add about 1/4 cup mashed potato to each tortilla

  5. Drizzle with the hot sauce and then sprinkle with the green onions

  6. Take a handful of the potato chips and crunch them over the top of each taco

  7. Fold in half and eat
