SAUSAGE AND SHRIMP JAMBALAYA

Serves 4-6

Remember in Seinfeld when Newman gets his hands on the jambalaya?

  • 1 cup each diced celery, onion and green pepper

  • 1 pound fully-cooked chorizo or andouille sausage, cut crosswise into 1/4” slices

  • 2 large cloves garlic, crushed

  • 1 cup white rice

  • 1 tablespoon creole or Old Bay seasoning

  • 2 1/2 cups chicken broth

  • 3 Roma tomatoes, diced

  • 1 pound raw, peeled & de-veined shrimp

  • 2 tablespoons parsley, chopped

DIRECTIONS

  1. Heat a large skillet (that has a lid) on medium high, add about a tablespoon of oil and when hot put in celery, onion and green pepper - cook until softened and just until they get some color, about 5 minutes

  2. Add sausage and cook 5 minutes or until it starts to brown

  3. Add garlic and when fragrant, add creole or old bay and stir well to mix through

  4. Add rice, stirring really well and let toast a couple minutes, then add broth, tomatoes and mix well

  5. Bring to a boil, turn down to a simmer, cover and cook 15 minutes

  6. Add shrimp, stir well and cover again - and in about 5 minutes the shrimp should be perfect or until all liquid is absorbed and rice is soft

  7. Add parsley and serve!

Old School Chocolate Wafer Log

Old School Chocolate Wafer Log

Serves 6-ish

My mom used to made this years ago and I thought she was a genius for it. But when I went to make it the first time myself, I realized the recipe was right there on the wafer box. And even though she's still a genius, I think mine is a little better because I add Bailey's to the whipping and sliced almonds and shaved chocolate to the top.

Ingredients

  • 1 pint whipping cream
  • 2-3 tablespoons Bailey's Irish Cream
  • 1 box Nabisco Famous Chocolate Wafers
  • 1/3 cup sliced almonds
  • Chocolate for shaving

Directions

  1. Put cream & Bailey's in a mixer and beat until stiff, yeah I said that
  2. Spread some of the whipped cream on a serving plate as a base to hold the wafers
  3. Spread a layer of cream on one side of a wafer, stack another wafer on top, add cream, another wafer and so on until all the wafers are used
  4. Lay the wafer stack on it's side on the plate, and fully cover with remaining cream
  5. Cover loosely with saran and refrigerate overnight
  6. Remove from fridge, and top with almonds and shaved chocolate
  7. Now this part is critical: cut the log on a diagonal to expose the wafer & cream layers

Grilled PB and Jelly

Makes one

This is not as goofy as it seems. If you like a PB & J, and who doesn't?...then this is a must-try. Give it a whirl for lunch one weekend.

Ingredients

  • 2 pieces of bread (if you're asking me, this needs a heavier grain bread)
  • PB - of course
  • Jelly - of course (I would go grape here, trust me)
  • Butter

Directions

  1. Spread PB on one slice of bread, and the J on the other.
  2. Put both slices together with the gooey stuff in the middle- as if that wasn't obvious.
  3. Lightly butter outside of one slice and place face down in a warm pan.
  4. Squish down and flatten a little with a spatula or your hand, but watch out for the sides.
  5. Butter top piece of bread and flip over once the bottom has browned slightly.
  6. Cut into wedges and enjoy!
