Crispy Honey Garlic Wings

Double fried wings tossed in sticky sweet deliciousness - good lord they’re sooooo good!

Ingredients

  • 3/4 cup soy sauce

  • 3/4 cup honey

  • 4 cloves garlic, crushed

  • 2 Tablespoons cider vinegar

  • 2 tablespoons sriracha

  • 2-3 pounds chicken wings

  • 1 cup corn starch

  • 2 tablespoons granulated garlic

  • 3 cups neutral oil for frying

  • Sliced green onion & toasted sesame seeds for garnish

Directions

  1. Combine soy, honey, vinegar, garlic & sriracha in a small pot

  2. Bring to a boil to over medium heat, then turn down and let simmer until slightly thickened, about 10 minutes

  3. White it simmers, dry wings well with paper towels and then toss with cornstarch & granulated to coat well

  4. Heat oil to 325 degrees and fry wings for 5 minutes in batches so you don’t overload the pan

  5. Remove to a cooling rack, and fry the rest

  6. Turn heat to 375 and fry winhgs again for another 5 minutes

  7. Remove from oil, let dry slightly then toss with sauce (not too much) plate and garnish with green onions and sesame seeds.

  8. En-fricking-joy!

Sriracha Popcorn

Makes one damn good bag

Why put sriracha in popcorn? Because we can, obviously.

Ingredients

  • One bag microwave popcorn
  • 1/4 cup butter
  • 1 clove garlic, crushed
  • 2 tablespoons Sriracha
  • 1/2 tablespoon sugar
  • Salt

Directions

  1. Make popcorn according to package directions
  2. While it cooks, melt butter in a small pot over low heat – stir in, garlic and Sriracha
  3. Toss popcorn with sriracha butter, sugar and salt to taste
  4. Serve

HOISIN SRIRACHA WINGS

These are deliciously sweet with a little kick, you can dial up the heat a little more just add more Sriracha.

INGREDIENTS

  • 2 dozen chicken wings
  • 3 tablespoons Garlic Hoisin Sauce
  • 3 tablespoons soy
  • 3 tablespoons honey
  • 3 tablespoons Sriracha
  • big pinch Kosher salt
  • 2 big garlic cloves

DIRECTIONS

  1. Preheat oven 425
  2. Mix all ingredients, everything but chicken
  3. Coat chicken with 3/4 of the sauce
  4. Cook on lined baking sheet for 15 minutes, flip, brush with a little sauce, cook for 15 minutes
  5. Flip again, brush with the remaining sauce and cook another 5 minutes

 

TO GRILL

    Pre-heat medium grill. Cook plain wings, turning occasionally, for 20 minutes. Baste generously with sauce and grill for 5 minutes.

    Maple Chipotle Wings

    Makes a pound

    INGREDIENTS

    • 1 pound chicken wings, I like to cut off the wing tip & separate the wing from the little tiny leg kinda thing
    • 1 cup maple syrup (or if ur feeling cheap pancake syrup will totally do)
    • 3 chipotle peppers, minced fine
    • Kosher salt

    DIRECTIONS

    1. Preheat broiler to high
    2. Combine syrup & chipotle peppers, mix well and put on med/high heat
    3. Bring to a boil, and turn down to a simmer - let go about 15 minutes or until slightly thickened
    4. Meanwhile put wings on a foil covered baking sheet, and place baking sheet about 6 inches below glowing coils - broil about 10 minutes per side until done
    5. Remove, put some wings in a large bowl, add some sauce and toss well
    6. Serve & right fricking now!!!!

    Bunch last minute visitors arrived on your doorstep...?! Have no fear. Keep your pantry stocked with these simple ingredients and it will always be a breeze.

    INGREDIENTS

    • bag of nuts (any kind, but I prefer cashews, unsalted)
    • 1 teaspoon butter
    • dash of smoked paprika
    • pinch of Kosher salt

    DIRECTIONS

    1. In small heat-proof dish, add all ingredients
    2. Microwave for 30 seconds
    3. Mix and serve with a ice cold beer or cocktail.

    Huli Huli Chicken

    Huli Huli Chicken

    Serves 6

    We made this when we were shooting Livecast in Kauai and went crazy for it

    Ingredients

    • 1/2 cup brown sugar

    • 1/2 cup soy sauce

    • 1/4 cup ketchup

    • 2 tablespoons Worcestershire

    • 1 teaspoon sesame oil

    • 1 tablespoon Sriracha

    • 3 pounds chicken wings & legs

    • Greens onions & sesame seeds to garnish

    Directions

    1. Combine first 6 ingredients, mix well

    2. Add about 3/4 of the marinade to chicken in a large bowl - set the rest aside

    3. Make sure chicken is well covered and refrigerate up to a couple hours

    4. Heat grill to medium and grill chicken until done the way you like it - which hopefully is not dry & burnt

    5. You can use the remaining marinade you set aside (before you added the raw chicken!) as a dip - awesome.

    Soy & beer braised pork belly

    Serves 2

    I crave this all the time. Make it. It's worth it. 

    INGREDIENTS

    • pork belly (got mine from COOK PIGS RANCH)
    • 2 tablespoons olive oil
    • ¼ cup of Soy sauce
    • 1 bottle asian beer
    • 2 tablespoons 5 spice powder
    • 2 smashed garlic cloves
    • 2'' block fresh ginger, peeled, cut into coins
    • 2 tablespoons Japanese (Kewpie) mayo
    • handful Chinese parsley, aka cilantro, chopped

    DIRECTIONS

    1. Warm up pot – Dutch oven perfect for pork belly
    2. Cut belly into a couple of pieces and score the top, cutting through the skin but not through the meat in a diamond pattern
    3. Add olive oil to pan and add pork belly for a few minutes enough so that its golden brown on all sides
    4. In a separate pan bottle of Asian beer
    5. Add pork belly to pan and add enough water so that pork belly is covered
    6. Let it boil, and then bring down to a simmer and cover it for about 2 hours
    7. Take out pork belly pieces and heat in another pan until sides are crisp
    8. Serve in a Hawaiian Kings roll and add in garlic hoisin sauce, Japanese mayo, and Chinese parsley, aka cilantro

    Grilled asparagus

    Super simple! Healthy grilling.

    Serves 4 

    INGREDIENTS

    • 1lb asparagus 
    • 3 teaspoons extra-virgin olive oil
    • 2 tablespoons grated Parmesan cheese
    • 1/2 lemon
    • 2-3 grinds fresh black pepper
    • 1 big pinch Kosher salt

    DIIRECTIONS

    1. preheat your grill to high
    2. Remove 1-2" bottom of the stalks
    3. toss in 2 teaspoons extra-virgin olive oil
    4. grill 3-4 minutes, keep turning
    5. dress asparagus: squeeze of lemon juice, drizzle 1 teaspoon extra-virgin olive oil, pinch salt and fresh black pepper and grated Parmesan

    SPICY HOISIN RIBS

    Simple and easy, just stir frying ribs and mixing them with a sweet & spicy sauce.

    Serves 2-3

    INGREDIENTS

    • ribs (enough for 2-3 peeps)
    • 2 tablespoons hoisin sauce
    • 1 tablespoon Gochujang (Korean red pepper paste)
    • 1 tablespoon soy sauce
    • 2 tablespoons canola oil
    • pinch Kosher salt
    • 1 green onion, chopped  
    • 1 teaspoon sesame seeds

    DIRECTIONS

    1. Pre cook ribs in oven 1.5 hours at 350 degrees, keep warm in foil

    2. Preheat wok until smoking

    3. Mix hoisin, Gochujang and soy sauce in bowl

    4. Add oil to wok, add ribs to color for 1-2 minutes, keep moving

    5. Add sauce, coat well, cook for 30 seconds

    6. Serve garnished with green onion and sea same seeds

    Stuffed and Braided Pizza

    This is the epitome of outstandingness! 

    Serves 4-6

    INGREDIENTS

    • 1 can refrigerated thin pizza dough crust
    • 10 Spanish Chorizo slices
    • 6 Provalone slices  
    • 1 packed cup, spinach
    • 10-12 slices Genoa Salami  
    • 1/2 teaspoon dried Oregano
    • 1/2 teaspoon garlic powder
    • 3/4 cup shredded mozzarella
    • 1 tablespoon olive oil
    • big pinch Kosher salt  
    • 3-4 grinds fresh black pepper  
    • 1 cup marinara sauce (I used my EVERYDAY TOMATO SAUCE

    DIRECTIONS

    1. Stretch out the pizza dough to rectangle, about 10" on short ends
    2. Get layering a single column  in the center of the dough: overlap Spanish chorizo, overlap Provolone, spinach, overlap salami, sprinkle on oregano, dust on the garlic powder evenly, load on mozzarella 
    3. On both sides, make diagonal slices from edge of the filling, to dough edge, every 1/2" all the way down (see photos), get braiding one over the other
    4. Brush lightly with olive oil, season generously with Kosher salt and pepper, cook for 15 minutes
    5. Heat through tomato sauce
    6. Slice and dip, devour!

    Moscow Mule

    Makes 1

    A great cocktail – just don’t be tempted to substitute ginger ‘ale’ for the ginger ‘beer’, because it won’t be the same. BTW, ginger beer does not contain alcohol.

    Ingredients

    • Ice cubes
    • 1 half lime, cut into 2 wedges
    • 2 ounces vodka
    • 4 ounces cold ginger beer

    Directions

    1. Fill a copper mug (or tall glass) with ice, add vodka, squeeze in both lime wedges - and drop in one of the wedges
    2. Fill with the ginger beer
    3. Serve

    Tortilla Chip Chicken

    Serves 2-4

    This super super simple appetizer, donated by loyal viewers, Lisa and Jeff. Trust me, make this – its juicy and delicious and it just doesn't get any easier than this!

    INGREDIENTS

    • 1 tablespoon canola oil
    • 1  1/2 cup crushed White Tortilla Chips
    • 1  1/2 oz hot taco seasoning
    • 10-12 chicken wings
    • 2 tablespoons Cholula hot sauce
    • 1/3 cup sour cream

    DIRECTIONS

    1. Preheat oven 350 degrees and grease a large baking sheet
    2. Mix chip crumbs and seasoning ingredients
    3. Rinse chicken in water and drain (don't pat them dry) then coat in oil
    4. Coat them generously in the dry mix
    5. Cook for 40 minutes, then serve with sour cream mixed with Cholula – easy!

    Baked Sausage & Cheese balls

    Makes 24 puffs

    A simple trio of ingredients that result in awesomeness! This is a recipe donated by David a longtime viewer of the show, we gave it a go and we loved it.

    INGREDIENTS

    • 8oz Cheddar cheese
    • 3/4 cup Bisquick mix
    • 1 cup uncooked sausage meat (room temperature)

    DIRECTIONS

    1. Preheat oven to 350
    2. Put all ingredients in mixer and mix until well blended
    3. Roll into roughly 24 one inch balls and place on un-greased baking sheet cook for 30 minutes

    Tri Tip with Tomato Pepper Sauce

    Makes approx one 2 pound tri tip

    This trip tip is crazy good by itself, but served with the tomato/pepper stuff...it's insane.

    Ingredients

    • One trip tip, 1 1/2 to 2 1/2 pounds

    • 1 tablespoon each: Kosher salt, ground pepper, cayenne, garlic powder, onion powder, dried oregano, dried rosemary and celery salt

    • 2 tablespoons olive oil

    • 1 green pasilla (poblano) pepper, diced

    • 1/2 large yellow onion, diced

    • 10 strips ready bacon, diced

    • 1 large garlic clove, crushed

    • 1 - 14oz can diced fire roasted tomatoes

    Directions

    1. Remove tri tip from fridge 30 minutes before cooking, let come to room temperature

    2. Combine all herbs in a small bowl, mix well

    3. Rub oil into tri tip, then rub well with herb mix

    4. Cook over direct heat 4-5 minutes a side to sear, then move to indirect heat and continue cooking until 130 degrees for medium rare

    5. While it cooks, put one tablespoon of oil in a medium pan and add onion and diced pepper - cook until softened, about 5 minutes

    6. Add bacon, cook until a little crispy

    7. Then stir in garlic and cook about 30 seconds or until fragrant and add tomatoes

    8. Stir well, turn down and let simmer, about 10 minutes

    9. When beef is done, remove, cover with foil and let rest 10 minutes before slicing & serving with tomato/pepper sauce

    Honey Garlic Spare Ribs

    Need to take an appetizer to someone's home? Bring these baby's along and they'll be talking about you all night. You don't even have to say where you got the recipe. Just send me an email telling me how good they were.

    Ingredients

    • 4-5 pounds pork spare ribs, 2 racks

    • 2 tablespoons garlic powder

    • 3/4 cup honey

    • 2 Tablespoons cider vinegar

    • 3/4 cup soy sauce

    • 3 cloves garlic, crushed

    • Sliced green onion

    • 1/2 teaspoon Sesame seeds

    Directions

    1. Cut racks into individual ribs and season with garlic powder

    2. Arrange in a 13x9-baking dish

    3. Cover with foil and bake at 350 for one hour, or until very tender

    4. Combine remaining ingredients (except green onions and sesame seeds) in a saucepan and simmer 5 minutes

    5. Remove from oven and drain ribs well - careful, there will be lots of steam under the foil

    6. Pour honey mixture over spareribs and make sure all ribs get coated

    7. Bake, uncovered, at 350 for another hour. Baste well about every 10 minutes

    8. Remove from oven and garnish with the green onions and sesame seeds.

    White Bean Chicken Chili

    We make this every year for Halloween because it's a nice change from regular chili and really delicious. Plus, it's perfect to put in a mug to eat while you are trick or treating - I mean while the kids are trick or treating.

    Ingredients

    • 1 medium yellow onion, diced

    • 4 cloves garlic, minced

    • 1 tablespoon olive oil

    • 4 cans Great Northern White Beans

    • One 4 ounce can diced green chilies

    • 2 cups cooked shredded chicken

    • 2 teaspoons cumin

    • 1 teaspoon cayenne

    • 1 teaspoon dried oregano

    • 3-4 cups chicken broth

    • Kosher salt and pepper to taste

    • Chopped cilantro for garnish

    Directions

    1. Drain beans

    2. In a medium pot, saute onions and garlic with oil until soft

    3. Add remaining ingredients - using broth to make it as thick or thin as you like

    4. Bring to a low simmer, turn down and heat through stirring well, salt & pepper to taste

    5. Serve topped with cilantro

    Chinese BBQ Ribs

    Serves 4

    So good...and a little different you'll love them. If you're a beer person (and who isn't with ribs?) pick up a some Chinese beer, Tsing Tao to go along with these.

    Ingredients

    • 2 racks pork back ribs, about 4 pounds
    • 1/4 cup white vinegar
    • 1/2 cup soy sauce
    • 1/3 cup honey
    • 1/3 cup Hoisin Sauce
    • 2 large garlic cloves, minced
    • 2 teaspoons 5 spice powder

    Directions

    1. Preheat oven to 400 degrees
    2. Place ribs and vinegar in a large baking or casserole dish - cover tightly with aluminum foil and bake 75-90 minutes or until very tender
    3. Mix soy, honey, hoisin, garlic and 5 spice powder - set asideRemove from oven and carefully lift off foil - watch out for steam
    4. Heat bbq to medium and place ribs meat side down without sauce - but you can baste the back with the sauce
    5. Cook until they start to develop grill marks, and turn over - now baste the top
    6. You could stop here after they grill a bit on this side, or you could baste them a bit more and then give them a couple more minutes meat side down
    7. Give them one extra basting after they've been removed, and just before you serve them

    Mexican Street Corn

    Serves 4

    Stupid good.

    Ingredients

    • 4 ears of corn, husks & silk removed
    • 3 tbs olive oil
    • 2 pairs wooden chopsticks
    • 1/3 cup Mayonnaise
    • 1/2 cup crumbled Queso Fresco or grated Parmesan cheese - on put on a plate
    • Juice of 1 lime
    • 1 tbs Chili Powder

    Directions

    1. Heat grill to medium high
    2. Rub olive oil on each ear and grill until they soften and get grill marks - about 15 minutes
    3. Remove from grill, insert a single chopstick into the end of each ear as a handle
    4. Brush with mayonnaise, roll in cheese, then sprinkle with a little chili powder & finish with a squeeze of lime juice

    One Pot Brats

    Makes 6

    Dog simple and super delicious - and everything is cooked in the same pot. Beautiful.

    Ingredients

    • 1 white onion, thinly sliced
    • 1 green pepper de-seeded and sliced thin
    • 3 tbs butter
    • 2 bottles of dark beer
    • 1/2 cup brown sugar
    • 1/4 cup apple cider vinegar
    • 1/2 tablespoon fresh ground pepper
    • 6 pack of bratwurst
    • 6 sliced sandwich rolls
    • Mustard, for serving

    Directions

    1. In large throw away foil pan (if ur doing this on a grill) add onion, green pepper and butter
    2. Cook over medium heat until veggies soften and get lightly brown
    3. Next add beer, sugar, vinegar and pepper to pan and mix well
    4. Let mixture cook until it comes to a simmer
    5. Then add brats to pan and let cook for about 5-10 minutes
    6. When brats are ready, toast buns , top bun with mustard, brat and some of the onions and peppers

    Queso Fundido Con Chorizo

    Serves 10 as an appetizer

    So really, aside from the fancy name this is just melty cheese with chorizo - that happens to be damn good. BTW, you can sub 'soyrizo' for the pork chorizo if you want no animal, less fat and less flavor - but have it still taste pretty good.

    Ingredients

    • 10 ounces pork chorizo
    • 1 small yellow onion, diced
    • 1 cup Monterey Jack cheese, grated
    • 1 cup cheddar cheese, grated
    • 4 ounces diced green chilis
    • 1/4 cup green onions, diced
    • Tortilla chips or something for serving

    Directions

    1. Preheat oven to 350
    2. Cook onion with chorizo in a medium sized oven proof skillet on the stove until chorizo is done - turn off heat
    3. Add 3/4 cup of each cheese and the chilis to the chorizo - mix well
    4. Add remaining cheeses to the top of skillet and place in oven
    5. Cook until melty, bubbly and awesome looking - 15 to 20 minutes and remove from oven
    6. Top with green onions and serve with something to put it on
