Makes one 9 inch pie
Sweet potato pie rules.
Ingredients
- One 9 inch pie crust
- 1.5 pounds sweet potatoes
- 3 eggs, lightly beaten
- 5 ounces evaporated milk
- 1 teaspoon each ground cinnamon, ginger and all spice
- 1/4 teaspoon nutmeg
- 1 cup brown sugar, firmly packed
- 1 teaspoon vanilla
Directions
- Heat oven to 350 and pre-bake pie crust about 10 minutes, allow to cool
- Turn oven to 425
- Peel potatoes, cut into equal size pieces and boil until soft enough to poke a skewer through them - 15 to 20 minutes
- Drain and then mash
- Add remaining ingredients to potatoes and mix well
- Pour into pie crust and bake at 425 for 5 minutes then turn down too 325 and finished baking for an additional 40 minutes
- Allow to cool and then serve
