Who doesn't love a scallop? Now that I think of, a bunch of people don't. Go figure...
Ingredients
- 1/3 cup diced fresh mango
- 1/3 cup peeled and diced cucumber
- 1/3 cup diced red bell pepper
- 3 tablespoons chopped fresh cilantro
- 2 tablespoons fresh lime juice
- 1 tablespoon honey
- 1 pound sea scallops, rinsed and dried
- 1 tablespoon peanut oil
Directions
- Mix all ingredients except scallops and set aside
- Season scallops with salt and pepper
- Heat non-stick pan over high heat
- Put in oil & when just smoking add scallops and sear each side until nicely brown and a cool little sort of crust builds
- Put on a plate and serve with the mango salsa
