HUEVOS HANDCHEROS

Healthy on-the-go breakfast for early starts like school or work – tasty protein and only approx 200 calories. To make it fast, just prep at beginning of the week sautee the veggies and keep them in the fridge. 

Serve 1

INGREDIENTS

  • 2 tablespoons pre-sauteed chilled veggies: onions, red onion, green onion, fresh green chili, red bell pepper (make a bunch of this and store in the fridge)
  • 1 tablespoon salted butter
  • 1 tablespoon shredded Monteray Jack cheese
  • 1 teaspoon salsa verde
  • 1 light flour tortillas
  • 1 egg
  • 1 teaspoon Cholula

DIRECTIONS

  1. Preheat skillet medium heat, butter, chilled veggies, cook 30 seconds
  2. Remove from heat, crack in the egg mix quickly for 30 seconds, add cheese, salsa verde and mix
  3. Warm your tortilla
  4. Build: tortilla, Cholula, egg mix, roll it up.... and off you go!

Roasted Tomatillo Salsa

Roasted Tomatillo Salsa

Make this and make it often, I'm in love.

Makes about 2 cups

1 pound tomatillos, 5 or 6

3 cloves garlic

1 jalapeno pepper

1 Serrano pepper

1 small white onion, cut in half

3 tablespoons chopped cilantro

Kosher salt

  1. Heat broiler to high

  2. Remove husks from tomatillos and rinse well to get off the sticky stuff

  3. Put tomatillos, garlic, peppers and 1/2 the onion on a baking sheet, drizzle lightly with oil and broil about 6 inches away from heat coils until beginning to start to blacken a bit - about 3 minutes

  4. Flip over and repeat, let cool slightly

  5. Put in a processor and whiz until nicely chunky, put in a bowl and add salt to taste, the other half of the onion finely diced and cilantro

  6. Stir and serve

Pork² Burger

Makes 4 burgers

While a ground pork burger with bacon mixed in is potentially overkill, this is a way delicious burger. And considering there's a fried egg on this... way delicious.

Ingredients

  • 1lb ground pork (I used 95% lean)
  • 1/3 cup cooked bacon, crumbled
  • 1 big clove garlic, crushed
  • Kosher salt and fresh black pepper
  • 1/3 cup bread crumbs, Panko if possible
  • 4 slices Monterey Jack cheese
  • 4 eggs
  • 3 tablespoons of olive oil
  • 1/3 cup sour cream
  • 3 tablespoons green salsa
  • 4 English muffins (or any hamburger bun)
  • Butter
  • 1/2 - 3/4 cup alfalfa sprouts

Directions

  1. Combine pork, bacon, garlic, salt, pepper and bread crumbs - mix well and make into 4 patties
  2. Pre-heat griddle or non-stick pan to medium
  3. Lightly oil patties and cook 3 minutes then flip, add cheese and 2-3 more minutes until done
  4. Butter the muffins and toast or grill along side eggs in another pan
  5. Mix sour cream and green salsa
  6. Build the burger: muffin on bottom, generous amount of sauce, burger, fried egg, sprouts and top muffin

Pepper Halibut with Salsa Cream

Pepper Halibut with Salsa Cream

Serves 6

I know - it sounds fancy and I'm not fancy. So who cares, just make it and impress your friends. But heed my warning - if you use red salsa instead of green - this will become one of the most horrifyingly ugly dishes you've ever made - so don't.

Ingredients

  • 1 red pepper, finely diced
  • 1 yellow pepper, finely diced
  • 1 Anaheim chili pepper, finely diced
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 2 pounds Halibut
  • 3/4 cup sour cream
  • 1/3 cup salsa verde (green salsa)
  • 1 teaspoon each cumin, cayenne and chili powder
  • 2 tablespoons cilantro, chopped

Directions

  1. Heat a non-stick pan to medium high, add olive oil, peppers and garlic and cook until just softened and just beginning to brown, about 5 minutes and set aside
  2. While that's cooking, heat broiler
  3. Combine cumin, chili powder and cayenne - and sprinkle over halibut
  4. Broil halibut until done – about 5-7 minutes depending on thickness
  5. While halibut and peppers cook, combine sour cream and salsa in a little pot and simmer until heated through
  6. Plate it by putting some pepper mixture on plate, then halibut on top and spoon some of the salsa cream over the top
  7. Garnish with a little cilantro

Fish Stick Tacos

Makes 10

No laughing - I have not lost my mind and these are really good.

Ingredients

  • 20 fish sticks, yes those little frozen-in-the-bag kind
  • 1/2 cup sour cream
  • 1/3 cup green salsa
  • 10 corn tortillas
  • 1/2 cup green cabbage, shredded
  • 1 lime, cut into wedges

Directions

  1. Bake sticks according to package directions
  2. Mix sour cream and salsa, set aside
  3. Warm tortillas until they get a tiny bit brown
  4. Take a tortilla, add sauce, cabbage, 2 fish sticks and finally a squeeze of lime
