HOT AND SOUR SOUP

Classic ‘hot & sour’ soup. Though you can certainly add chicken, pork or whatever you like, we’ve made this with only shiitakes & tofu…but you won’t miss the meat, trust me.

Serves 4

INGREDIENTS

  • 3 cups chicken broth
  • 8 ounces firm tofu, cubed into a medium dice
  • 4 Shiitake mushrooms, stemmed and thinly sliced
  • 1-2 tablespoons chili paste
  • 3 tablespoons soy sauce
  • 3 tablespoons apple cider vinegar
  • 1/4 teaspoon fresh ground pepper
  • 3 tablespoons corn starch
  • 2 tablespoons water
  • 1 egg, beaten

DIRECTIONS

  1. In medium saucepan bring chicken broth to a boil
  2. Add mushrooms, tofu & chili paste - let boil a couple minutes
  3. Stir in soy, vinegar and pepper - mix well
  4. In small bowl mix corn starch & water until smooth, and stir into the broth
  5. Simmer 5 minutes until broth thickens, then turn off heat
  6. While stirring broth in a circular direction (take your pic) pour in the egg from several inches above the pot in a very slow stream to create ribbons
  7. Serve - Gung Hay Fat Choy!

Fried Rice Pancakes

Fried Rice Pancakes

Serves 4

Fried rice – fantastic. 
Fried rice pancakes – ridiculously fantastic, in a weird ‘east meets west’ sorta way.   

INGREDIENTS

  • 3 tablespoons peanut oil or olive oil
  • 1 teaspoon sesame oil 
  • 1 cup leftover chilled fried rice
  • 1 cup prepared pancake mix (I use "just add water" kind)
  • Hoisin sauce for serving
  • 2 green onions, chopped

DIRECTIONS

  1. Re-heat rice
  2. Pre-heat non-stick skillet, add some oil and ¼ cup of the rice, spread out slightly
  3. To about a 4 inch circle
  4. When it starts to sizzle, pour just enough pancake batter slowly over the top to cover
  5. Cook a couple minutes or until just set on the bottom, then flip and cook until done
  6. Serve rice side up with a little drizzle of Hoisin sauce and green onions for garnish

Egg Drop Soup

Egg Drop Soup

Makes about 4 cups

Instant comfort. You could always add a little cooked chicken or some veggies - but you don't need to.

Ingredients

  • 2 large eggs

  • 4 cups chicken broth

  • 2 tablespoon dark soy sauce

  • 1 teaspoon sesame oil

  • 4 tablespoons thinly sliced green onions for garnish

Directions

  1. Beat eggs in small bowl - set aside

  2. Heat the broth in a small pot and bring to a boil

  3. Stir in soy sauce

  4. Return to a boil then turn off the heat

  5. While stirring soup in a fast circular fashion with a fork, slowly pour in beaten egg from about 4-5 inches above the pot

  6. Continue stirring until egg gets all cool and kinda stringy, drizzle sesame oil and that’s it

  7. Serve in a bowl with the green onions on top
