Ingredients
- 10 ounces jarred roasted red peppers, drained
- 1 clove garlic
- 1/4 - 1/3 cup chicken stock
- Kosher salt and fresh ground pepper
- 4 Sea Bass fillets
- 2 tablespoons olive oil
- Cilantro to garnish
Directions
- Add peppers and garlic to blender, blend until smooth
- Season with salt & pepper and add chicken stock until desired thickness
- Put sauce in a small pot and warm over low heat
- Lightly oil fish and season well with salt & pepper
- Cook in a non-stick pan over medium/high heat until beautifully seared outside and cooked through inside
- Serve by spooning warm sauce on a plate, adding fish and topping with a little cilantro
