- 2 eggplants
- 3 tablespoons olive oil
- 1 garlic clove, crushed
- 1/2 teaspoon cumin
- good pinch kosher salt
- freshly ground pepper
- pinch cayenne
- 3 tablespoons fresh curly leaf parsley, finely chopped
- finely chopped
DIRECTIONS
- Cut eggplant lengthways, use 1 tablespoon olive oil to coat each side, cook 40 mins
- Scrap out insides and discard the skin, chop pulp several times to break it up
- mix everything in a bowl, and serve with grilled flatbread
