Admittedly, this is not the best looking soup, but it is fricking delicious. Trying putting a piece of baguette in the bowl first...then adding the soup. #nobadthere
Makes about 8 cups
INGREDIENTS
- 1/2 pound bacon, diced
- 1/2 large yellow onion, diced
- 1 celery stalk, diced
- 1 carrot, diced
- 1/2 teaspoon cumin
- 6+ cups chicken stock
- 1 cup lentils, rinsed
- Kosher salt (about 1/2 teaspoon) & 5 grinds fresh ground pepper
- Chopped cilantro for garnish
DIRECTIONS
- Cook bacon in a large pot until halfway to being crispy
- Remove excess grease, leaving a couple tablespoons
- Add onion, celery, carrot and cumin - cook until just softened, about 5 minutes
- Put in broth and lentils
- Bring to a boil, then turn down to a simmer and cook 30-45 minutes or until lentils are soft
- Add salt & pepper, mix well and serve with cilantro
