Make about 1 1/2 cups
Pesto - what isn't it good for? And if you like it a little spicy, add the Serrano.
Ingredients
2 cups fresh basil leaves, packed
1/4 cup pine nuts
2 cloves garlic
1/2 cup grated Parmesan cheese
Optional - 1 Serrano pepper, stem removed and rough chopped
1/2 cup extra virgin olive oil
Kosher salt and freshly ground black pepper
Directions
Combine basil, pine nuts, garlic & Parmesan (and Serrano if using) in a blender or food processor
Blend continuously until finely chopped
With the blender running, slowly drizzle in olive oil until well combined
Add salt & pepper to taste and use
