Shrimp & cheese? Oh hell yes!
Makes about 5
¼ cup mayo
1 clove garlic, minced
Juice from ½ lime
Kosher salt & pepper
1/2 pound peeled, uncooked shrimp, (31/50's are perfect) cut into smallish pieces
Oil
1/3 cup shredded Monterey jack cheese
corn tortillas
Combine, mayo, garlic, lime juice and a pinch of salt & pepper - mix well and set aside
Heat a pan or flattop to medium high, and add tortillas, heat them about a minute, then flip over add some sauce and cheese to each
Add more oil to the flattop and put on shrimp – they wont take long
Keep them moving so they cook evenly, and when pretty & pink, put some on each tortilla, fold in half and cook another minute or so on each side
