Serves 4-6
I found this in my mom’s recipe box - and after laughing at the ‘can of lemonade frozen concentrate’ decided to give it a go. And boy am I glad we did. Think Chinese restaurant lemon chicken, it’s so damn good.
1 cup all purpose flour
1/2 teaspoon each garlic powder, smoked paprika, kosher salt, coarsely ground pepper
1/4 teaspoon cayenne pepper
4-6 chicken thighs, bone-in & skin on
2 tablespoon butter
1 tablespoon oil
One 12-ounce can lemonade frozen concentrate, defrosted
3 tablespoons brown sugar
3 tablespoons white vinegar
Preheat oven to 350 degrees
Put flour, garlic powder, paprika, salt, pepper & cayenne in a large zippered bag - mix well
Add chicken pieces one at a time, zip shut and shake well to coat chicken evenly, put on a plate
Put butter and oil in a large, oven proof pan (this guy would be perfect) and heat to medium/high
When the butter is melted, add chicken skin side down, and cook until golden brown 15-20 minutes
Flip over and cook on the bottom 5 minutes
In a bowl put lemonade, brown sugar & vinegar - mix well to combine
Turn chicken back to skin side down, add the lemonade mix and put in the oven - cook 20ish minutes or until chicken is about 165 degrees
Flip over to skin side up, add a lemon slice to each and baste a bit with the sauce
Put back in oven until chicken is 175 degrees
Remove, plate and…you know what to do
